| How can I only view one display? In other apps you can specify what display you want to view.

The VNC Manager v4.5 allows to switch between displays when viewing UltraVNC Server desktop. This can be done by clicking on the "Switch Multi-Monitor" toolbar button. I don't think UVNC Server allows to specify which display is viewable by default.

You can do this using a standalone UVNC 1.0.5.x viewer using [hostname or ip]:[display number] for example 192.168.0.10:1
but personally I'd prefer to use the method described above

From what I know [hostname or ip]:[display number] is just another way to specify the destination port. Or in case of Linux VNC server to specify Linux display, which is not the same as physical monitor.
So for exmaple if you enter IPADDRESS:1 is the same as if you connect to IPADDRESS on port 5900, in case of IPADDRESS:2 it will be equal to IPADDRESS on port 5901
